You Di Rou

  You Di Rou, a kind of preserved meat, was originally invented by the antient Zuo people, who lived in the place called “Zuo Du Yi”, to prevent fresh pork from being rotten in hot summers. The processing method is very easy:

  First, cut the pork into pieces weighing 0.5 kilo each, then heat up the lard oil until boiling, put the prepared pork into the lard and add appropriate amount of salt, next fry the pork till no moisture content remains. At last, take out the fried pork and reserve them into ceramic pots with the lard together.

  It still keeps as a mystery nowadays that the meat, in absence of freezing facilities, can be reserved in the pots for years without decaying.
